Tavella is Pablo Chirivella's mature project, in which he invites the customer to immerse himself, with all five senses, in each of his memories. The gastronomic experience is presented as a journey to the origin, as a tribute to the product. Respect, creativity and innovation are added to the unwavering quality of the raw materials. The first act begins with a journey through the flavours of the world: the starters bring Valencian tradition closer to other cultures. The main act takes you back to the origin; through the fire, in the fish or meat, the product appears in its purest character. The restaurant is located in the family home, a century-old farmhouse which, since the end of the 19th century, was used for agriculture. Ten years ago, this space became Tavella, a project focused on the exploitation of its roots and traditional cuisine. The utmost respect for the environment, quality local produce and gastronomic culture are the essential foundations of a cuisine that is presented as cultural, solid and identity-based.
